Day 4 

Breakfast: 

Happy Juice* + a mix of 2 finely cut dates + almonds + sesame + pumpkin seeds

Snack: 

Banana Bread* + Peppermint tea

Lunch: 

Zoodles* + peas + cherry tomatoes + fresh basil + silvered almonds 

Snack: 

Veggie sticks (carrots/cucumber/capsicum/radish) + hummus*

Diner: 

Carrot asparagus soup* + fresh parsley + seed cracker*

Happy Juice  

1 portion

  • 1 fresh orange juice
  • ½ cup frozen mango cubes 
  • 1 cup spinach
  • 1 cup mix chopped cucumber + celery
  • ¼ cup Coconut water

How to make it: 

Blend all together the ingredients.

Topping

A mix of 2 finely cut dates + almonds + sesame + pumpkin seeds

Banana bread  

7 portions

  • 1 cup almonds
  • 1 cup sunflower seeds
  • 1 cup flax seeds
  • 1 cup dry coconut
  • ½ Tsp. cinnamon
  • 8 ripe bananas
  • 1Tsp. Backing powder
  • 3 spoon coconut oil

How to make it: 

Mix all well in food processor and bake for 30 – 45min on low heat 160 -180. 

Zoodles with peas and cherry tomatoes  

1 portion

  • 1 cup zucchini noodles
  • Cherry tomato
  • ½ Cup cooked green peas
  • Onion + Garlic
  • Olive oil
  • Fresh basil
  • 1 Tbsp silvered almonds

How to make it: 

Prepare the zucchini into noodles – Cut the onion and Garlic. In the pan, put a little bit olive oil and make sautéed the onion + garlic first. Then add the zucchini noodles, green peas and cherry tomato. Salt and pepper at your convenience. 

 

Topping

Best top with some fresh herbs such as basil + almonds.

Veggie sticks with hummus  

hummus, 6 portions

  • 250grs Cooked chickpeas
  • 1 large lemon juice
  • 2 Big tbsp. Olive oil
  • Garlic
  • Salt and Pepper

veggie sticks, 1 portion

  • 1 carrot 
  • 1/4 cucumber
  • 1/4 red capsicum
  • 4 radish

How to make it: 

Hummus: Blend all together the ingredient until getting a smooth paste. 

 Veggie sticks: Cut them in length in small pieces and dip in the hummus.

Topping

Add extra topping parsley, paprika, cumin and olive oil when serving.

Carrot asparagus soup  

2 portions

  • 2 Carrots
  • 1 small bunch of asparagus
  • Oregano
  • Garlic, Onion
  • Salt + Pepper
  • Water

How to make it: 

Cut all the vegetables – Chopped onion and garlic. Put sautéed onion and garlic together in a pan until it looks gold brown Put all the veggies together, salt + pepper. After all done, Blend it all until smooth texture. 

Topping

Serve in a bowl and put on top some fresh herbs / seeds.

Seed cracker   

multiple portions

  • ½ cup pumpkin seeds
  • 1cup ground flax seed
  • ½ cup sesame
  • 1 cup water
  • 1 Pinch of salt and pepper

How to make it: 

Mix all ingredients together in the bowl. Leave the mixture for 15 minutes. Spread the preparation on a tray with baking paper. Spread on the tray as thin as possible. You can sprinkle some herbs such as oregano or some chili. Bake in the oven for 1 hour at 170C.
